Apricot Dessert Bars Recipe

Ingredients: Combine: 2½ cups cooked dried apricots ¾ cup sugar ½ cup juice from cooked apricots. Cook over medium heat for 5 minutes until slightly thickened. Cool and mash. Sift together: 2 cups flour 1 teaspoon salt ½ teaspoon soda Cream ¾ cup butter and gradually add 1 cup sugar Blend in dry ingredients to form a crumb mixture. Stir in 1½ cups coconut ½ cup chopped nuts Press 3 cups crumb mixture into and half way up of a 9x13 pan. Bake at 400º for 10 minutes Spread apricot mixture over partially baked crust. Sprinkle remaining crumb mixture over apricots. Bake for 20-25 minutes. Cool and cut into bars.

Directions:First place the dried apricots in a pan and cover them with water. Simmer them for about 10 to 15 minutes until they begin to soften. To have enough apricots it will probably take 2 bags. Any left over apricots are wonderful on toast. |

Notes: It is best with Sunkist California Dried Apricots. Mediterranean apricots do not have the flavor of the California apricots and do effect the outcome greatly.
