º 12 large fresh jalapeño peppers
º ⅓ cup cream cheese, softened
º 3 T. Finely chopped red bell peppers
º 3 T. Finely chopped green onion
º 2 cloves garlic, minced
º ½ tsp. seafood seasoning
º 1½ cups Mexican cheese blend, shredded
º ¾ - 1 cup dungeness crabmeat, thawed and drained if frozen

Preheat grill to medium heat 300-350º. Cut jalapeños in half lengthwise, removing seeds and membranes. For milder flavor, bring a small pan of water to boil, add jalapeños, cook 5 minutes, drain, rinse with cold water and pat dry.

In medium bowl stir together cream cheese, bell pepper, onion, garlic, and seafood seasoning. Stir in cheese and crabmeat. (May be refrigerated 24 hours).

Grill stuffed jalapeños, covered 7-10 minutes or until bubbly.

Personal Notes:
I have found that they are somewhat unstable and can turn, therefore spilling out the cheese, so make sure they are secure when grilling. Terrific!
