1 red bell pepper
1 red onion
1 jalapeno
1 lime
2 t. Southwest spice blend
2 T. sour cream
12 oz. chicken breast
6 flour tortillas
1/2 c. cheddar cheese

Directions:
Directions:
Preheat oven to 400º. Core and seed bell pepper, thinly slice. Halve, peel and thinly slice onion. Slice jalapeño into thin rounds. Place jalapeño in small bowl. Zest lime until you have 1/2 t. and then cut in half. Squeeze juice of lime into bowl with jalapeño and toss to coat. Set aside to marinate. Heat a drizzle of oil in a large pan over medium-high heat. Add onion, pepper and 1 t. southwest spice. Cook until softened and lightly charred, 4-5 minutes. Season with salt and pepper. Remove from pan and set aside.

Mix together sour cream, lime zest and squeeze of lime. Add 1 T. water if you want this to be thin.

Heat large drizzle of oil in pan used for veggies over medium-high heat. Slice chicken into thin strips. Add to pan, tossing occasionally until brown on surface (2-4 minutes). Toss in veggies and 1 t. southwest spice. Continue to cook chicken until no longer pink.

Place tortillas on baking sheet with cheddar cheese. Bake in oven until cheese is melted.

Assemble fajitas.
