cup Grey Poupon dijon mustard
2 T. lemon juice
1 T. olive oil
1 (2-3 pound) roasting chicken, whole or cut up into parts (typically use 4 bone-in chicken breasts, cut in half with kitchen shears)
Salt and pepper, to taste

Directions:
Directions:
Mix mustard, lemon juice and olive oil in small bowl. Place chicken on broiler pan or on rack in baking pan; brush with mustard mixture. Season with salt and pepper. Bake at 425 for 40 minutes or until done.
