Ingredients: Cake: 1 pound sweet butter 8 Tbl. quality cocoa (plus a bit for dusting) 4 cups unbleached AP flour 4 cups sugar 1/2 tsp. Kosher salt 2 cups boiling water 1 cup buttermilk (room temperature) 2 tsp. baking soda 2 tsp. pure vanilla extract 4 large eggs (beaten)
Frosting: 3 cups heavy whipping cream 24 oz. semisweet chocolate (broken into pieces) 2 tsp. pure vanilla extract

Directions:Cake: Grease two 9 inch cake pans and dust with cocoa. Combine the flour, sugar and salt. In a saucepan add the butter and melt. Add the cocoa then the boiling water. Stir for 30 seconds. Add to the flour mixture and stir until smooth. Combine the eggs, vanilla extract, buttermilk and baking soda. Mix into the butter mixture. Pour into prepared pans and bake for 20-30 minutes or until a toothpick comes out clean. Cool completely and start the frosting.
Frosting: Heat the cream in a saucepan then add the chocolate pieces. Stir until completely smooth. Pour into a mixing bowl and refrigerate until completely cooled. When cooled add the vanilla extract and beat with a whip until light and airy. Decorate at you would like. |
