Green Bean Casserole Recipe

1/3 cup butter
1/2 cup onions (chopped)
1/2 cup sliced fresh mushrooms
2 cups chicken broth
2 cups sliced green beans (fresh or frozen)
1 can cream of mushroom soup
1 can (2.8 oz.) can French-fried onion rings
1 tsp, Kosher salt
Freshly grated pepper (to taste)

Directions:

Preheat oven to 350º.
In a large sauce pan, add the butter and let it melt.
Add the onions, mushrooms and saute for 4 minutes on medium-high heat.
Add the chicken broth, green beans and mushroom soup.
When mixture is hot, place in a buttered casserole dish.
Sprinkle the onion rings, salt and pepper on top.
Bake until bubbling, around 25 minutes.

I had to include this recipe in the cook book. We grew up with this side dish and to this day I love it.
I tried to make it a bit healthier but you can use the original recipe with the cream of mushroom soup and canned green beans. A must dish at Thanksgiving!
