4 oz. crab meat
1 T. mayonnaise
1 tsp. mustard
½ egg yolk
½ tsp. worcestershire
dash of hot sauce
¼ c. bread crumbs
1 ½ t. fresh parsley, chopped
½ t. Old Bay

Directions:
Directions:
Keep crab meat cold as long as possible. Mix egg, mustard and mayo together. Add worcestershire and hot sauce. Season with Old Bay and add crab. Gently fold in bread crumbs until the mixture stiffens. Form into crab cakes the size of quarters. Bake or fry.

Serve with a garlic aioli or tarter-style sauce.
