2 T. oil
6 corn tortillas (cut into 1 inch pieces)
1 lb. ground beef
1½ c. chopped onion
1 c. chopped bell pepper (I did not use)
1 tsp. garlic, minced
2 (14 oz.) cans Mexican style diced tomatoes, undrained
2 (14 oz.) cans of water
1 (15 oz.) can small red beans, undrained
1 (15 oz.) can black beans, drained & rinsed
1 (15 oz.) can hominy, undrained (I used 1½ c. frozen corn)
1 (7 oz.) can diced green chili peppers
1 (7 oz.) can sliced pitted black olives
1 (1¼ oz.) package taco seasoning mix

Directions:
Heat oil & brown tortilla pieces. Remove from pan & set aside.
Brown ground beef, onion, bell pepper & garlic till beef is done. Drain off fat. Stir in tomatoes, water, red beans, black beans, hominy, chili peppers, black olives & taco seasoning mix. Bring to boil turn heat to low, simmer uncovered about 20 minutes, stirring occasionally. Add tortilla pieces right before serving. Top each bowl with crushed corn chips, shredded cheese & sliced green onions.
