1 package Pioneer or Winkler Mennonite Farmer Sausage
1/3 c. onion, chopped
6 c. water.
5-6 red potatoes, peeled and chopped into small chunks
3-4 carrots, sliced.
1-2 tsp. salt, or to taste
1/4 tsp. ground black pepper, or to taste
Pinch of dried basil
2-3 c. milk and cream mixed

Directions:
Directions:
1. Fry 1 package (2 strings) sliced Pioneer or Winkler Farmer Sausage with chopped onion for about 15-20 minutes until sausage is well-browned.

2. Add water and bring to a boil. Turn heat down and simmer for 25-30 minutes.

3. Add potatoes, carrots, salt, pepper. and dried basil. Cook until veggies are tender - about 20-25 minutes.

4. When the soup is done, remove from the element and stir in milk/cream mixture. Adjust seasonings and heat through over low heat.

5. Serve hot with fresh homemade buns.

This soup recipe came from the Mennonite Treasury Cookbook. I have adjusted the recipe over the years to the current ingredients. Originally the recipe used ham, but my family prefers farmer sausage instead, which gives the soup a nice salty and smoky flavour.

This soup is great on a cold winter day. Enjoy!
