2 cups grated zucchini
1/2 cup shredded onion
Salt and Pepper to taste
3/4 cup Bisquick
1/4 cup vegetable oil
2 eggs
3/4 cup grated cheddar cheese
1/4 teaspoon dried basil

Directions:
Directions:
Mix all ingredients and pour into buttered 9 X 9 or 8 X 8 casserole dish. Bake at 350º for 40-45 minutes.

To make more:
Use 3 1/2 cups zucchini, 3 eggs, 1/2 cup oil, 1 1/2 cups cheese, 1/2 teaspoon basil, 1 cup Bisquick, 1/2 cup onion.
