Ingredients: -Up to 20 lb turkey, completely thawed. -garlic salt and pepper to taste

Directions:1. Preheat the oven to 475 degrees. 2. Melt some butter. It doesn't take much. You just want enough to put a light coating on the breast. 3. Gently separate the skin from the breast, but don't remove it. You just want to be able to get your hand between the skin and the breast meat. Your goal is to rub that butter on the turkey breast between the breast skin and the meat. Don't butter the outside of the skin. 4. Lightly salt and pepper all the skin on the outside (this helps make the skin crisp!) 5. Place the turkey in a covered roasting pan. Place in the preheated oven and bake for 20 minutes. 6. Reduce the heat to 250 degrees. (Our goal is to slow roast the turkey from this point on) 7. Cook the turkey at 250 for 20 additional minutes per pound. Ex..20 pound turkey cooks for 8 hours. 8. Check the turkey temperature using a quality meat thermometer regularly after halfway through the cooking time, just to make sure the turkey doesn't get done sooner than expected, or get overcooked. 9. Remove the turkey and allow it to rest when interior breast meat reaches 170-180 degrees. 10. Let the turkey rest uncovered for at least 20 minutes before carving to all the juices to redistribute themselves in the turkey. |
