1 C. Tomato Sauce (homemade or prepared)
C. Butter
1 lb. Scallops
⅓ C. Vodka
C. Heavy Cream
Salt and pepper
1 lb. Penne pasta, cooked al dente
Grated Parmesan Cheese

Directions:
Directions:
In large skillet. Melt butter until foamy. Add scallops and cook until done. Add vodka and stir until evaporated. Add tomato sauce and cream and mix well. Cook for 10 minutes uncovered. Add salt and pepper to taste.

Add in pasta and coat over medium heat until well-coated. Serve with grated cheese.

Note: for a spicy tomato sauce, use Fradiavolo Tomato Sauce by Francesco Rinaldi.
