1 – 1.5lb boneless chicken breasts

1 can black beans – rinsed and drained

1 can Mexicorn

1 can Rotel tomatoes

1 – 2 can Cream of Chicken Soup (depends on how moist you want your chicken mixture)

2 – 3 Tbsp Mrs. Dash Chipotle Southwest seasoning (or any other of your choice)

2 cups shredded cheese - divided

1 cup crushed tortilla chips. I prefer either Doritos Nacho or Fritos

1. Preheat oven to 350º F

2. Grease 2 ½ qt casserole dish.

3. Cook chicken until done. Drain and place in large mixing bowl and shred.

4. Stir in beans, corn, Rotel tomatoes, soup, seasoning and ½ cup shredded cheese.

5. Sprinkle crushed tortilla chips in bottom of casserole and spread chicken mixture on top.

6. Place in preheated oven and bake for approx 25 – 30 minutes or until soup is bubbly and casserole is slightly
browned on top.

7. Add remaining 1 ½ cup cheese to top and return to oven until melted.

I had to prepare dinner for my family at the last minute one Sunday afternoon. I hadn't been to the store for groceries so, I looked through the freezer and pantry to see what I had on hand. I sort of made this up as I went along finding different ingredients that would go together. Both my son and husband loves this.
