º 6 chicken thighs
º Garlic salt
º Onion salt
º Black pepper
º Salt
º Onion (1) chopped in small chunks
º Green pepper (1) chopped in small chunks
º Tomato sauce (1 small can)
º Bay leaves (3)
º Uncle Ben’s Original White Rice (2 cups)
º Yellow food coloring
º Green peas (1 can drained)
º Beer (2 - 8 ounces bottles)

Season chicken with the four spices. In a frying pan, fry the chicken in vegetable oil till we’ll cooked on both sides.

In a separate deep pot, sauté the onion and green pepper till cooked, add the tomato sauce. Stir frequently over low heat.

Substitute the beer for the water required in Uncle Ben’s rice recipe on the box, adding water if needed to complete. Add 2 teaspoons of salt to the liquid mix. Boil.

Add the rice alternating the fried chicken with the rice in the liquid. Stir. Bring to a boil.

Add the bay leaves and yellow food coloring. Cover. Drop heat to low for 15 minutes.

Add the peas (drained). Stir. Cover. Continue low heat till rice done, usually another 15 minutes but you need to check it frequently.
