º Several sprigs of fresh mint
º Peel of 1 small lemon, without the white pith
º Juice of 1 small lime
º 1 tsp. sugar
º ½ cup crushed ice
º 2 ounces Bacardi light rum
º Sparkling mineral water to taste

In a mortar, crush the mint leaves. Combine the leaves and the remaining ingredients, except the mineral water, in a cocktail shaker. Shake well to release mint aroma. Pour without straining into a tall glass and top with sparkling mineral water.

* Do not make more than 2 drinks at a time. Also, the drinks should be made just before serving them. (In other words, a pitcher of “mojitos” does not work as the drink becomes too watery).

* We have found that the mintier, the better. Add more mint leaves than less.

* If you know you are going to be serving many of these at a gathering, I recommend you prepare simple syrup ahead of time and cool it down in the refrigerator. (Simple syrup is almibar). Just boil equal parts water and sugar together and use the almibar instead of table sugar.

* Be sure the mint leaves are fresh and do not ENdeavor to substitute another herb.

* Add a cool garnish like a thin piece of sugar cane, if available.

* Do not substitute Margarita mix - ever!
