3 boneless skinless chicken breast.
Salt
Pepper
4 boiled eggs,
1 medium onion, diced
1 c celery diced (optional)
1 c diced icicle pickles (you may use relish or the Mt. Olive sweet petite pickles)
Pickle juice to taste.
Duke's mayo

Directions:
Directions:
Boil chicken breasts until done. Remove from water and allow to cool. Shred chicken & place in large bowl. Chop boiled eggs & place in bowl with chicken. Fold in onions, pickles & celery (if desired).

The next steps are up to you. It's all about taste & texture. Salt & pepper to taste. Begin adding mayo until desired texture. The pickle juice brings the sweetness to it, so that also is to taste. Pour in the pickle juice, mix well to taste. Add salt & pepper as needed. Refrigerate when completed.
