1 raw sweet potato diced in small pieces (about the size of your fingernail).
Can biscuits (10 pk..I use Laura Lynn Brand), best when used cold.
3/4 c sugar
1 stick of margarine
1 c of water.

Directions:
Directions:
Preheat oven to 350º. Dice about half of a sweet potato in small pieces & set aside. Separate biscuits and place on cutting board. Roll the biscuit flat (or use the heel of your hand) and cut into quarters. Place sweet potato in each quarter and fold over sealing well. Place in 9 x 13 casserole dish. This will make 40 dumplings.

In small sauce pan bring to a boil the margarine, water & sugar. Pour over pan of dumplings making sure to cover each dumpling with the sauce.

Bake for 30 to 40 minutes, occasionally removing from oven and brush sauce mixture in pan over dumplings while baking. Cook till golden brown.
