Banana Bread


Ingredients:

1 c. sugar
½ c. softened butter
2 eggs
1 tsp. vanilla

3 over ripe bananas (4 if small) mashed in separate bowl

2 c. flour
½ tsp. salt
1 tsp. soda

¼ c. evaporated canned milk
½ tsp. vinegar to sour milk

Directions:
Directions:
1. In large bowl cream sugar, butter, eggs, and vanilla. Mix well.
2. Add bananas. Mix well.
3. Alternately add flour mixture and milk mixture, ending with flour.
4. Add ¼ c. chopped walnuts and/or chocolate chips.
5. Spray loaf pan with nonstick cooking spray. Pour batter into pan.
6. Cook in preheated oven of 325ºF for 1 hr.

Alternate recipe:
1. Follow steps 1-3 but for step 4, add desired amount of mini chocolate chips.
2. Pour into greased mini muffin pan, and cook at 350ºF for about 12 min.
 

Almond Frosting

2 c. powdered sugar
1 tsp. vanilla extract
1 tsp. almond extract
2 tbsp. softened butter
enough canned milk to make creamy

1. Mix the powdered sugar and butter.
2. Add everything else. Mix until smooth and creamy.
3. Frost cooled loaf of banana bread.

This was a recipe given to me by Allyson Stevenett who was my boss at the Stevenett Malt Shoppe in Provo, UT. Her parents owned this little burger joint that was pretty popular with the college students. The recipe was to make a loaf of banana bread with frosting, but I put a twist on it and make it into mini muffins with mini chocolate chips minus the frosting. But it is definitely delicious made into a loaf with frosting on top minus the chocolate chips. Either way, you can't go wrong. :)
