THE Original Nilla Wafer Banana Pudding Recipe

Ingredients: 3/4 c sugar, divided 1/3 c flour Dash of salt 3 eggs separated (yolks for pudding & whites for meringue) 2 c whole milk 1/2 tsp vanilla flavoring. 45 Nilla Wafers. 5 bananas (or less depending on your dish size)

Directions:Heat oven to 350º. Whisk 1/2 cup sugar, flour & salt in top of double boiler (I don't have one so I just mix on medium heat in a saucepan). Blend in 3 egg yolks & milk. Cook uncovered for 10 to 12 minutes or until thickened stirring & scraping constantly to prevent sticking. Once pudding begins to bubble, remove from heat & stir in vanilla.
Spread a small amount of custard on the bottom of 1-1/2 quart baking dish. Cover with layers of Nilla Wafers, bananas and custard. Repeat layers 2 times. Set aside.
Beat egg whites on high speed until soft peaks form. Gradually beat in the remaining 1/4 c of sugar until stiff peaks form. Spread over custard sealing well to the edges of the dish. Use spatula to tap gently small peaks on meringue to make it pretty!
Bake for 15 to 20 minutes or until lightly browned. Cool slightly or refrigerate until ready to serve. It never makes it to the refrigerator before being served at my house...it's best enjoyed fresh out of the oven with a cold glass of milk! |
