1 turkey carcass broken into parts
2 medium onions-quartered
2 celery stalks - roughly chopped
2 carrots roughly chopped
1 head of garlic cut in half (no need to peel)
½ tsp peppercorns
Optional: 1 rosemary branch, a few sage leaves or a few sprigs of thyme

Directions:
Directions:
1. Put all ingredients into pot and cover with 2-3 inches of water.
2. Bring to a boil and the reduce heat so it's at a very gentle simmer.
3. Simmer for 4 hours.
4. Remove from heat and strain.
