32 oz spaghetti sauce ( you can make grandma Rhoda's sauce without sausage or buy V's frozen Sauce)
15 oz Ricotta Cheese
3 cups shredded Mozzarella cheese / Parmesan Cheese mix
10 oz pkg frozen spinich (microwave it and then squeeze all the water out of it)
1 tsp Italian seasoning
2 large eggs (mix em up with a fork)
salt and pepper
1 pkg Manicotti noodles

Preheat oven to 350 degrees

in a 9x13 inch pan spray it with olive oils or wipe it down with olive oil. put one cup of spaghetti sauce on the bottom on the pan and spread it out to coat the bottom.

In a bowl Mix 1 1/2 cups of the cheese with the eggs, Italian seasoning, spinach (squeezed dry of water), salt and pepper.

boil the Manicotti noodles for only 5 min ( you don't want them too soft)

Fill each noodle with mixture and lay in the pan, when you have all filled all the noodles cover the manicotti with the remaining spaghetti sauce, sprinkle the remaining 1 1/2 cups of cheese over them and bake for 40 minutes.
