Sweet and Sour Sauce


Ingredients:

6 large or 12 small boneless, skinless chicken breasts
Salt and pepper
2 c. cornstarch
4 eggs, beaten
½ canola oil

Directions:
Directions:
Preheat oven to 325º. Cut chicken into small pieces. Season with salt and pepper. Dip chicken in cornstarch. The dip into eggs. Heat ¼ c. oil in a large skillet until slightly browned, but not cooked through. Place browned chicken in a greased 9x13 baking dish. Repeat until all chicken in browned. Mix all the sweet and sour sauce ingredients together, Ketchup may look a little clumpy. Bake chicken for 1 hour, uncovered. During baking process, stir every 15 minutes. Serve immediately.

8 T. ketchup
1 c. distilled white vinegar
2 T. low sodium soy sauce
2 tsp. garlic salt
