"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Ingredients:
30oz of Tomato Paste (use the basil, garlic and Oregano kind)
8 cups of water
3 Tbsp Olive Oil
1/2 onion diced
8 cloves of Garlic Diced
3 tsp oregano (fresh)
1 tsp of Salt
1 tsp sweet basil
2 Tbsp of Sugar
2 Tbsp of Parsley
3 Bay Leaves
1/4 tsp red pepper flakes
1 pd of Hamburger or meatballs
1 pkg of 4 Italian Sausages (Sweet Italian Sausage preferred) or Mild if you cant find Sweet

Directions:
Directions:
Dice the onion and Garlic, in a deep pot add olive oil and turn pot on medium heat, add the onion and garlic and sweat these out for 5 minutes, turn down heat if anything starts to brown. Next add Tomato Paste, water. Stir.

Add Oregano, Salt, Sweet Basil, Sugar, Parsley, red pepper flakes and bay leaves.

Let simmer for about an hour, i usually simmer for 2 - 3 hours on very low if i have time. If you are only going to simmer for one hour then start cooking your hamburger and frying your sausage to add it to the sauce right away. If letting it simmer for a few hours just make sure to add these in an hour before serving.

If sauce is too bland add Garlic Salt, salt and more red pepper until you get it to the desired tartness

Sausage Preparation:
In a frying pan add 1 tbsp of olive oil, on medium high heat add the sausage and brown on all sides. Add 1/2 cup of water a little at time until you have cooked the sausage for about 25 minutes, rotating frequently. Slice into quarter inch pieces before adding to the sauce.
