Bubba's Boston Cream Pie Recipe

Golden Layer Cake:
½ cup of shortening
2¼ cups of flour
1½ cups of sugar
3 teaspoons of baking powder
1 teaspoon of salt
1 cup of milk
2 eggs
1½ teaspoons of vanilla

Cream Filling:
⅓ cup of flour or ¼ cup of corn starch
⅔ cup of sugar
¼ teaspoon of salt
2 cups of milk, scalded
3 slightly beaten (with fork) egg yolks
2 tablespoons of butter or margarine
1 teaspoon of vanilla
Need double boiler

Chocolate Butter Frosting:
¼ cup of butter or margarine
1 square of unsweetened chocolate
2 cups of 10x sugar
4 tablespoons of milk (maybe more)
1 teaspoon of vanilla

Golden Layer Cake:
Set oven to 350º.
Line 2 round (9 x 1½) cake pans with wax paper.
Stir sugar into shortening.
Add eggs and beat vigorously.
Add milk and vanilla and beat for several minutes.
Add flour, baking powder and salt and beat vigorously.
Bake in 2 wax paper-lined pans for 25 to 30 minutes at 350º.
Cool and place one cake on a cake plate.
Cover layer with half of cream filling recipe (below).
Place second layer on top.
Cover with rest of cream filling recipe.
Insert several toothpicks so layers will stay in place.
Refrigerate.
Ice top of cake before serving (see Chocolate Butter Frosting recipe below).

Cream Filling:
Mix flour, sugar and salt in container with lid and shake so flour won't be lumpy.
Add this mixture to the scalded milk in top of double boiler.
Cook over moderate heat, stirring constantly until mixture thickens.
Add small amount to egg yolks, then stir into hot mixture.
Cook for a minute or two, stirring.
Add butter and vanilla and allow to cool.
Add cream filling to layers.

Chocolate Butter Frosting:
Melt butter and chocolate in microwave.
Add 10x sugar, milk and vanilla until able to spread.
Ice top of cake before you serve.
