2 cups diced white potatoes
2 cups water
1/2 cup peeled carrots (diced) or baby carrots cut up
3/4 cup diced celery
1/2 cup chopped onion
1 teaspoon salt
1 teaspoon black pepper

Directions:
Directions:
Mix all ingredients in pot and boil until vegetables are tended - approx 15 minutes. White vegetables cook, cube 1/4 lb. velveeta cheese and add to vegetables when cooked. Take off stove and let cheese melt.

Add following white sauce to add to soup:

1/4 cup margarine melted in pot
Gradually blend in 1/4 cup plain flour and mix well (do not brown do keep heat low)
When flour is smooth, add 2 cups of whole or 2 percent milk. Cook until sauce thickens (stirring continuously) using low to med heat.
When sauce thickens, add to soup and heat soup well and serve
