Ingredients: Raw Pork Shoulder 1'' Dice 3 Lb Vegetable Oil 1/2 crou Chicken Stock 2 qt Kosher Salt 2 Tbsp Vegetable Oil 2 c Onion 1/4'' Dice 2 c Fresh Garlic Minced 1/2 c Roasted Diced Hatch Green Chilis 4 c Light Chili Powder 1 c Dried Oregano Leaves 1/4 c Cumin 2 Tbsp Coarse Black Pepper 2 Tbsp Flour 1 1/2 c

Directions:1. Brown pork shoulder in vegetable oil in skillet over medium high heat 'till brown on all sides. Season with Kosher salt. 2. Transfer pork to a one gallon sauce pot, cover with chicken stock and simmer for 1 1/2 hours 'till fork tender. 3. While pork is simmering heat 2 c vegetable oil. Add onion and brown over medium high heat for 5 minutes. Add garlic and green chilis and brown an additional 4 min. Add chili powder, cumin, and oregano. Stir for 2 min. Add flour and stir for 2 minutes. 4. Combine all ingredients with pork and chicken stock, bring to a simmer while stirring and cook over low heat for 1 hour. 5. Serve with fresh flour tortillas. |
