2 tablespoons dry yeast
½ cup warm water from tap
⅔ cup honey (or molasses, or ⅓ cup of each)
⅔ cup oil
2 tablespoons salt
1 egg
12-13 cups whole wheat flour

Directions:
Sprinkle yeast into ½ cup warm water; do not stir. In large mixing bowl; combine 5 cups warm tap water, honey, oil, salt, and egg. Add 7 cups whole wheat flour. Beat at low speed until thoroughly mixed. Beat at medium speed for 2-3 minutes. Add 3 cups whole wheat flour and yeast mixture. With mixer, slowly knead in 3 cups whole wheat flour. After all the flour is added, let the mixer knead the dough 6-7 minutes. During this time, grease four bread pans; oil your hands and the counter. Remove dough from the mixer one-quarter at a time. The dough will be a little sticky, but will easily form into a loaf. Place in pan with folded side to bottom of pan. Watch the bread so that is doesn't rise more than ⅓ in bulk. Bake at 350º for 40 minutes. When the bread is done, remove from pans and let cool. For a softer crust, brush tops of loaves with oil or butter. If made with freshly ground whole wheat flour, bread should be stored in refrigerator.
