1 c quick oats
1/4 c flour
1/2 t. salt
1 1/2 t. baking powder
1 c. sugar
1/2 c butter, softened
1 egg
1 t. vanilla

Directions:
Directions:
Preheat oven 325º
Cover baking sheet with foil, then spray with nonstick cooking spray
Combine oats, flour, salt and baking powder, mix with whisk, set aside

In a large bowl, combine sugar & butter, beat on medium speed to form grainy paste. Add egg and vanilla and beat until smooth. Add flour mixture and blend until just combined.

Drop by teaspoonfuls onto baking sheet, 2 1/2 inches apart

Bake 10-12 minutes
peel cookies off the foil, respray between batches
