1/4 cup vegetable oil,
4 lbs. pork shoulder cut in large pieces
3 Tbsp kosher salt
1 chopped onion
1 clove crushed garlic
3 Tbsp lime juice
1 Tbsp chili powder
1/2 tsp oregano
1/2 tsp cumin
29 oz chicken stock

Directions:
Directions:
Season pork with salt and brown all sides in a pan with oil. Add all ingredients to a stock pot and simmer pork for 2 1/2 hours.
Preheat oven to 400º. Transfer pork to an oven safe pan, drizzle some juice (about 2 ladles full) and salt onto pork and then shred the pork. Put it in the oven for 30 minutes taking it out every 10 to drizzle more liquid on top.
Now you can discard the rest of the juice but it is great to make rice with if you want to use it! Use this pork for tacos, sandwiches or huevos rancheros. The possibilities are endless!
