Apple Sauce Recipe

Directions:
Thoroughly wash apples in vinegar/water solution. While they are soaking make sure jars and lids are clean and sanitized. I like to place in warm oven until I need them. Cut and core apples (no need to peel) and fill stock pot 3/4 full with 3 inches of water boiling. Stir occasionally to soften apples. Strain out of pot into large bowl. Fill powerful blender full with cooked apple slices, 1/4 cup of sugar and 1 teaspoon of cinnamon. Using some of the cooking water to allow apples to blend just enough to desired thickness. Blend until smooth and poor into warm/hot jars leaving 1/2 inch head space. Clean rims of jars and secure lids and rings. Process in water bath for 30 minutes.

This process is a bit different if using a victorio strainer. I believe this way is much quicker and cleaner but both ways produce great apple sauce.
