2 Boxes Baby Bella Mushrooms
1/2 chopped onion chopped fine
2 cloves of garlic chopped fine
4 slices of thick cut bacon chopped
spicy sausage (I buy the sausage that comes in the black tube from Raley's/BelAir, use about ¼ ot the tube)
half a medium red bell pepper diced fine
approximately 1/4 to a 1/2 cup bread crumbs (I used TJ's brand)
5 scallions chopped fine
cup plus mozzarella shredded
Olive oil, butter olive oil, 1/2 a stick of butter
Tony's Creole Seasoning salt
Cayenne pepper
Fresh ground pepper
Fresh grated Parmesan cheese

Pre-heat the oven to 400 degrees
Pop the stems and use a small spoon to scrape the gills out, reserve all of it and chop fine
In a skillet put a med. drizzle of olive oil and half a stick of butter on medium heat
Add onion and garlic, allow it to bloom for about 3-5 minutes
Add bacon and sausage, continue you cooking until sausage and bacon are cooked through
Add bell pepper and cook for another 5 minutes
Add chopped mushrooms, most of your liquid will be sucked up, add seasonings at this point and continue cooking for another 7-10 minutes. Turn off the heat and let rest for 10-15 minutes.
In a medium size mixing bowl add the green onion, mushroom mixture, and shredded cheese, mix well, then add your bread crumbs and mix again.
Brush tops of the mushroom caps with butter olive oil
Stuff mushrooms so they are slightly mounded, use micro-plane to shred Parmesan over the mushrooms.
Put in the oven, bake for 10 minutes, switch to low broil for an additional 5 minutes
