Directions:ROYAL ICING
3 cups of powdered sugar 2 eggs whites 1/4 tsp of Cream of Tartar.
Whip the egg whites until frothy, add the other ingredients, and whip for 7-9 minutes until the volume has increased and the icing holds stiff peaks. You may need to add more powdered sugar. The icing should be very stiff otherwise they would hold the graham crackers together.
Since I did this for so many I always tripled this recipe. I made some for the moms assembly party the night before and some for the actual neighborhood party. Place the icing for the neighborhood party in a tightly covered dish so it doesn't harden. The Mom's would assemble the houses the night before the party. Of course I would serve soup and drinks for the Moms! |

Notes: For 25 years I’ve been doing this for our neighborhood every Christmas. We start at my house and then the kids go caroling and end up at the Webbs where Jeanne has lots and lots of finger food and Bruce has his signature Hot Buttered Rum. It has become one of my favorite holiday traditions and the little ones love it all the way up to the college age kids. I've always said that I was going to keep doing it for the next generation. So Titus, Aliyah, Macie and any other of my grandkids, including the neighborhood grandkids this is for you!
