1 c. blanched Almond Flour
⅔ c. Tapioca Flour
½ c. Coconut Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
⅛ tsp. Sea Salt
4 T. Butter, cold and cubed
½ c. Full fat Coconut Milk
2 Eggs
4 slices Bacon, cooked and crumbled
2 T. Chives, minced

Directions:

1. Preheat oven to 375ºF.

2. Combine all of the flours in a large bowl with the baking powder, baking soda, and salt.

3. Add the butter and using your fingers, work the butter into the flour until you have a crumbly mixture.

4. Add the coconut milk and eggs to the mixture and mix well until you have a dough. Add the bacon and chives and mix until just combined.

5. Line a baking sheet with parchment paper. Using an ice cream scoop, scoop the dough onto the pan. Bake for 14-15 minutes, until tops are lightly browned and scones are firm. Allow to cool before serving.
