5 large sweet potatoes
1/2 c. butter (softened)
1/2 c. sugar
2 eggs (beaten)
1 t. vanilla
1/3 c. milk
1/2 c. heavy cream
1 c. light brown sugar
1/3 c. melted butter
1 c. chopped pecans

Directions:
Directions:
Preheat the oven to 350º
Scrub sweet potatoes well. Bake in oven until tender, 40 minutes.
When they are cool enough to handle, scoop out the insides into a large mixing bowl. Mash well.
Mix the softened butter into the sweet potatoes along with the sugar, eggs, vanilla and milk. Pour this mixture into a 9x13 pan.

Bring cream to a simmer in a small saucepan. Add brown sugar and stir until dissolved. cook this mixture over medium heat until it reaches soft ball stage on a candy thermometer (240º).
Remove from heat and beat in the butter and chopped pecans. Pour this mixture over sweet potatoes and Bake until very hot and beginning to brown
