1 Tbsp plus 1 Tsp each vegetable oil and margarine
1 cup each: diced celery, onions, and green bell pepper
2 small cloves garlic, mashed
4 cups canned crushed tomatoes
12 ounces shelled and deveined cooked shrimp
2 cups cooked long grain rice
4 ounces ham, diced
2 bay leaves
1/2 tsp each: chili powder, black pepper, and ground thyme

In dutch oven pot, combine oil and margarine and heat until margarine is bubbly and hot; add diced vegetables and garlic and sauté over medium heat until vegetables are soft. Reduce heat to low, add remaining ingredients, and let simmer, stirring occasionally, until thoroughly heated. Remove bay leaves before serving
