2 eggs
3 cups grated, drained potatoes
4 T. grated onion
1 t. salt
dash of pepper
2 T. flour
Oil for frying

Directions:
Directions:
Beat the eggs and add the potatoes, onion, salt, pepper and flour. Heat enough oil in a heavy skillet to fry potatoes crisp. Drop a large spoonful of potato mixture into the hot oil. Fry on both sides. Eat with jelly, applesauce, sour cream or yogurt.
