1 Cup Oil
2 Cups Sugar
2 Eggs, well beaten
2 Tsp. Vanilla
3 Cups Flour
1½ Tsp. Soda
3 Cups Chopped Apples (Use any kind. I like Granny Smith the best.)
1 Cup Chopped Pecans




Directions:
Directions:
Mix all together in large bowl. This is a really thick batter. That's normal. Pour into greased, floured 9x13 cake pan.
Bake 45 min. to 1 hour in 350º. Remove from oven, sprinkle with powdered sugar.......and eat. This cake is best when served warm. Really good with a glass of cold milk.

This recipe was given to me by a very young (18 years old at the time) woman, named Jeanne Smith.
We worked together At Coastal States Gas in Houston in 1974-1979. She was a treasure; I have never forgotten her and especially think of her when I bake this cake.
