5 LEMONS
1 C. SUGAR
1 C. BOILING WATER
WATER AND ICE TO TASTE

Directions:
Scrub, then juice the lemons, setting aside juice. Place the peels in a large bowl, add the sugar to the lemon peels, and mix thoroughly. The sugar should coat the inside and outside of the peels. Allow the sugar and peels to stand 20 minutes. This allows the juice and oil to come out, but IF IT STANDS TOO LONG, THE LEMONADE CAN BECOME BITTER. After 20 minutes, add the boiling water. Once the sugar is dissolved, remove the peels, add the juice, ice, and some water* if you like tart lemonade, use a little less water; if you like it sweet, add a little more sugar.

*This is a concentrate. Use about one part to two parts water.
