2 packages (10 oz) frozen spinach, thawed and drained thoroughly
1 cup Jiffy Mix or Bisquick
½ cup grated Parmesan
½ teaspoon seasoned salt
4 beaten eggs
½ c. oil
½ cup very finely chopped or grated onion
1 minced garlic clove
1 cup shredded Monterey Jack cheese
½ teaspoon salt
½ teaspoon oregano

Directions:

Grease and flour a 9x13 pan
Heat oven to 350°

Mix all ingredients in a large bowl and spread in prepared pan.
Bake about 25 minutes.
Let cool slightly before cutting into squares.
