4 slices Bacon, diced
1 Onion, minced
1 Clove Garlic, minced
1 head Broccoli, chopped
4 c. Chicken Broth
1 c. Coconut Milk
Sea Salt and Fresh Ground Black pepper to taste

Directions:
Directions:
1. Heat a large pot over medium heat and add the bacon. Cook until crisp. Remove bacon from pan, leaving fat behind.

2. Add the onion and garlic, and cook until softened. Add the broccoli, stir and cook for 2 minutes. Add the broth to the pot and bring to a boil. Reduce heat to a low simmer and simmer for 10 minutes, until broccoli is tender.

3. Transfer soup to a blender and puree until smooth. Transfer back to the pot and add the coconut milk. Season with salt and pepper.

4. Serve the soup topped with the reserved bacon.
