3 T. Olive Oil
2 Cloves Garlic, minced
2 Bell Peppers (any color), sliced
1 Red Onion, sliced
4 c. Spinach, chopped
½ c. Carrots, shredded
2 T. Lemon Juice
½ c. Fresh Parsley, chopped
2 c. Chicken Breast, cooked and shredded
Sprouts or Microgreens for garnish
Sea Salt and fresh Ground Pepper to taste

1. Heat the oil in a heavy bottomed skillet over medium heat. Add the garlic, peppers, and onion and cook until softened. Add the spinach and carrots and cook until spinach is wilted. Add the parsley and lemon juice and turn off heat.

2. Stir the chicken into the vegetables and serve topped with the sprouts.
