¾ c. onions, chopped
1 large clove garlic
3 tbsp. olive oil
4 c. tomato juice
2-6 oz cans tomato paste
1 c. water
3 tbsp. sugar
1 ½ tsp. salt
½ tsp. pepper
1 ½ tbsp. crushed oregano or 1 tbsp. ground oregano
1 bay leaf

*can add basil and parsley if desired*

Directions:
Cook onion and garlic in hot oil until tender, but not brown; stir in remaining ingredients. Simmer uncovered at least 30 minutes (the longer you cook, the thicker and more flavorful it will get). Remove bay leaf and add meatballs the last 30 minutes of cooking.
*small batch, needs to be adjusted for more than 2-4 people or canning*
