Ingredients:  
2 lbs carrots, sliced 2 1/2 inches thick
Salt and pepper to taste
Water as needed
2 tablespoons butter
1/2 teaspoon ginger, grated
1/4 cup orange juice, no pulp
1 tablespoon honey
1 teaspoon light brown sugar
1/8 teaspoon cinnamon
1 oz orange brandy

Directions:
Directions:
Simmer carrots in water with salt and pepper until just tender. Drain water. Sauté carrots with butter and ginger until hot. Add the remaining ingredients except for the brandy. Cook rapidly until carrots are almost dry. Add brandy, deglaze, flame and serve.
