½ c. butter
½ c. finely chopped green onion
¼ c. minced shallot
¼ c. finely chopped celery
¼ c. all-purpose flour
2 c. whole milk
1 pint oysters with their liquor
Salt
Hot sauce
Garnish: chopped fresh parsley

Directions:
Directions:
1. In a small Dutch oven, melt butter over medium heat. Add green onion, shallot, and celery; cook until softened, stirring occasionally, about 10 minutes. Sprinkle with flour and cook, stirring constantly, 5 minutes.
2. Stir in milk, and bring to a simmer. (Do not let milk boil.) Cook, stirring often, until thickened, about 10 minutes.
3. Stir in oysters and liquor. Cook until oysters are cooked through, 5 to 10 minutes. Add salt and hot sauce to taste. Garnish with parsley, if desired. Serve with oyster crackers.
