4 thick cut pork chops
2 cups stuffing (homemade or store bought)
1/2 onion (chopped)
1 clove of garlic (chopped)
1 tsp. Kosher salt and freshly ground black pepper
2 Tbl. melted butter (for stuffing)
1 tsp. thyme and Rosemary (dried or fresh)
2 Tbl. olive oil
1/2 cup apple cider or apple juice (heated) for the stuffing
1 cup apple cider for the cooking of the pork chops
1/2 cup AP flour

Directions:

Wash and dry the pork chops.
With a sharp knife slice the pork chops in the center (leaving a pocket) and not cutting through the chop.
Place the flour, salt and pepper on a plate and drench the chops on both sides.
In a large skillet saute the onion, garlic in 2 Tbl. butter.
Cook until onions are translucent.
Place the stuffing, onion mixture and heated apple cider in a bowl and mix well.
Set aside.
When the stuffing mix is cool enough to handle place the stuffing into the pockets of the chops.
Using the same skillet that you cooked the onions in, add the olive oil and heat.
Add the chops being careful not to overcrowd them.
Cook on medium heat and add the apple cider a little at a time so that the chops don't stick to the pan.
Cover the skillet and cook on medium heat.
About 10 minutes of cooking, carefully turn the chops over (it is okay if the stuffing falls into the pan) and cook on the other side. Add more cider if needed and cook another 10-15 minutes.
total cooking time should be around 25 minutes.
