1 1/2 to 2 lbs. Lean Ground Beef ( could sub ground turkey)
2 Cloves Garlic, finely chopped
1 tsp. Sugar
1 tsp. Salt
1/2 tsp. black pepper
2 cans 8oz. Tomato Sauce
4 Cups Dry Egg Noodles (1/2 ib.)
5 Scallions chopped
1 3 Ounce Package Cream cheese, softened
1 8 Ounce container Sour Cream
1/2 Cuo(or More) Shredded Cheddar Cheese

In a large skillet cook beef breaking up into little pieces with a wooden spoon, until browned. Carefully drain off drippings. Stir garlic, sugar, salt, pepper and tomato sauce into meat, cover and simmer 15 minutes.Meanwhile in a large deep pot of lightly salted water cook noodles until firm yet tender. Drain noodles. In a small bowl stir together scallions, cream cheese and sour cream until well blended. Lightly coat bottom of shallow 2 1/2 quart baking dish with nonstick cooking spray. Arrange noodles over bottom of dish, spoon meat sauce evenly over noodles. Carefully spread sour cream mixture over top of meat layer. Sprinkle with cheddar cheese. heat oven to 350, Bake casserole in 350 oven, until heated through and bubbly about 30-40 Minutes Let stand before serving. Can be made ahead of time refrigerated and baked when needed.
