1 cup sugar
¾ c. shortening or margarine
2 or 3 eggs
1 teas. vanilla
1¾-2 cups flour
½ teas. salt
2½ teas. baking powder
1 c. milk (can use part canned, part whole)

Directions:

Cream together the sugar and shortening. Add the eggs, one at a time. Add the vanilla. Mix the dry ingredients in a separate bowl. Add it to the sugar/shortening mixture alternately with the milk, ending with flour. Pour into 9 X 13 pan. Bake in a 350º oven until done.

My Mom told me that when she was young neighbors would hire her to make this cake and they would pay her 25 cents! I use this recipe when I make a Pineapple Upside Down Cake.

To make a Pineapple Upside Down Cake, just melt 1 stick butter in the oven in the bottom of 9 X 13 pan, remove from oven and add one large can crushed pineapple (juice and all) and 1 cup of brown sugar. Stir well and pour cake batter over top. Bake as usual...might take a little longer and look a little browner, but that's ok! After removing from oven, let stand 5-10 minutes then invert onto foil covered cookie sheet. Decorate with red maraschino cherries!
