4-6 boneless chicken breasts, skin removed
1 tsp salt
1/2 tsp pepper
1/3 c all-purpose flour
4 T. butter, divided
2 T. olive oil
1/2 c chicken broth
1/4 c lemon juice
8 lemon slices
1/4 c flat-leafed parsley, chopped

Slice each chicken breast in half lengthwise, if the breasts are big. Place each chicken breast in a Ziploc bag and seal. Pound the chicken with a meat mallet. Sprinkle chicken with salt and pepper. Dredge chicken in flour and shake off excess. Melt olive oil and 2 T. butter in a large frying pan. Brown chicken on each side until golden brown and done. Remove chicken and keep warm. Brown chicken on each side until golden brown and done. Add broth and lemon juice to skillet and cook 1-2 min, until slightly thickened. Add 8 lemon slices and remove from heat. Remove from heat. Add parsley and remaining 2 T. butter. Stir until butter melt. Add chicken back to pan and cover with sauce.
