Rhodes Parker House Roll Dough (Frozen) 10 ea
Yellow Onion Caramelized 1 ea
Pablanos (fire roasted peeled and diced 1/4'') 2 ea
Mushrooms Fresh Sliced Sauteed (stems removed) 8ea
Shaved Prime Rib 2 Lb
Smoked Provolone (shredded) 2 c
Fresh Garlic Chopped 2 Tbsp
Onion Diced 1/4 c
Mushroom Stems 10 ea
Thyme, Oregano and Black Pepper Dried 1 tsp ea
Red Wine 1/4 c
Beef Broth 2 c
Kosher Salt 2 tsp

1. Proof rolls in warm area of kitchen for 3 hours or 'till they triple in size. Brush lightly with butter and bake in a 400 degree oven for 12 to 15 minutes. Keep warm.
2. Prepare Au Jus by caramelizing diced onion, mushroom stems and garlic over medium high heat for 5 minutes. Add thyme, oregano, black pepper salt and red wine...reduce by1/2. Add beef broth and reduce an additional 1/3. Strain and keep warm.
3.Combine caramelized onion, roasted poblanos, sautéed mushrooms and shaved Prime Rib in a hot skillet and sear quickly while stirring about 1 minute.
4. Slice rolls just enough to fill with Prime Rib filling and 1 Tbsp. grated provolone. Serve immediately with warm Au Jus.

This is an amazing simple appetizer made the next day with your leftover prime rib. Guests will probably prefer this to the prime rib itself. The key is having everything hot when assembling. They will literally melt in your mouth. My personal favorite holiday snack.
