turkey giblets
1 medium onion
3 stalks celery
1 pound ground meat
1 loaf dry homemade bread (lay bread out and allow to dry completely)
3 eggs
salt
pepper
half bunch of fresh parsley

Directions:
Directions:
Grind turkey giblets (I use a food processer). Finely chop the onion and celery. Brown giblets, onion and celery in a large fry pan. Add the ground meat and brown. Allow to cool slightly.

Soak bread in water. Squeeze out bread and place in large mixing bowl. Add 3 beaten eggs, salt, pepper and chopped parsley. Mix in ground meat mixture. Mix well and stuff turkey or bake in a separate casserole dish. Bake at 350º. Use suggested times for appropriate size turkey on the wrapper. If baking as a casserole, bake approximately 1 hour.

Alternate method: Cut bread into cubes and allow to dry. Put bread and meat mixture in large mixing bowl. Add enough chicken stock to moisten all ingredients. Mixture should be quite wet. Do not over mix or the dressing will be sticky. Add eggs and remaining ingredients and continue as above.
